‘Nashville hot chicken sandwich’ helps bring attention to new slope-side offering, the White Rabbit Tavern

Sara Nance is thrilled that customers walking through the doors of the White Rabbit Tavern in Steamboat Springs have discovered the Nashville hot chicken sandwich, and she hopes they will give the rest of the menu a taste.
“We have really approachable foodstuffs that we are really proud to make,” said Nance, general manager of both the White Rabbit Tavern and the coffee shop Unravel. “Our Nashville hot chicken sandwich is probably our most popular item right now. You have to make sure to order it ‘Nashville hot’ because it doesn’t come that way.”
The White Rabbit Tavern is the latest dining experience at the Gravity Haus at 2304 Apres Ski Way, which opened in October 2022. Renovations on the space that houses the White Rabbit Tavern were recently finished, and the restaurant opened to the public in December.
It also shares the space with Unravel Coffee + Bar, a coffee shop that serves premium coffee brands and opened in November with a menu that includes breakfast items as well as freshly brewed coffee, espresso, tea and specialty items.
Both Unravel and the White Rabbit Tavern open at 7 a.m. daily with Unravel closing at 3 p.m. and the White Rabbit Tavern staying open until about 9 p.m.
The White Rabbit has a happy hour from 3-6 p.m. each day, offering a 6-till-6 where the restaurant has six food items for $6 until 6 p.m. in addition to $6 well drinks and drafts.
“The remodel has allowed us to create a much more robust experience,” Nance said. “We have more seating room that is integrated with the bar. It’s just a full-service restaurant as opposed to kind of small specialty space that they had before.”
In addition to the crispy chicken sandwich that goes for $22, the menu at the White Rabbit Tavern also has the Fitch Ranch burger, a grilled salmon BLT and Lions Mane Wrap sandwiches. Plates include the Teton lamb Bolognese, Verlasso salmon, winter squash enchiladas and grilled fish tacos. The menu also features sides, cocktails, beers and wines.
“We don’t sell anything with high-fructose corn syrups, trans fats or dyes in our food,” Nance said. “We actually want a very healthy menu.nWe want people to feel refueled, and at the end of the day, as a company, we care about all the parts of resort living. That includes having a great time on the slopes or mountain biking, but also feeling like you have eaten well and given your body the nutrition it needs.”

She said Gravity Haus uses whole grains, offers vegan options and doesn’t use preservatives or additives.
“We have a whole team of folks that work on our programming and the ingredients,” Nance said. “We’re making everything fresh behind the bar. We’re making everything fresh at Unravel and in the kitchen.”
Gravity Haus General Manager Megan Annuschat said the remodel more than doubled the dining space and opened the room to large windows that look out over the slopes of Steamboat Resort. The location of Gravity Haus allows those wanting to visit the White Rabbit Tavern or Unravel ski-up access and guests can easily ski to the nearby gondola.

She also said the restaurants and hotel are open to the public, so people can stop by for a cup of coffee or breakfast, lunch and dinner. Rooms at the lodging establishment are also available to customers who do not have a Gravity Haus membership.
“There is the membership aspect that plays a part in it, but it’s not the full picture,” Annuschat said, adding that memberships allow residents living in the area to take advantage of amenities such as the outdoor heated pool, hot tub, exercise room and co-working space. “It’s very similar to a regular hotel to a certain degree. The membership on top of that is just for the locals in the area, so that we allow them the opportunity to use the space.”
Gravity Haus offers several membership options including an all-in for $200 a month with unlimited gear access, hotel savings, day access, amenities, fitness classes, co-working and member events with unlimited use at other Gravity Haus locations. A local pass offers day access and amenities, fitness classes, co-working and member events for $140 a month.
Nance, who has worked at the Cantina, Mambos, Dos Amigos, Sevens and Hazies since moving to Steamboat Springs in 2000, said she is excited to be leading the food efforts at Gravity Haus and with the welcoming the White Rabbit Tavern has received.

“I’m thrilled to see all the locals have come in, and it’s just been such an incredible reception,” Nance said. “People are just so excited and so many have said, ‘This is what it should have been the whole time.'”
