Antonio and Jaime Escarcega are bringing authentic Mexican flavors to the west side of Steamboat Springs with Los Brothers Pallo Asado al Carbon, which opened April 11 at 2432 Lincoln Ave.

“The secret recipe for chicken,” Jaime Escarcega responds when asked what makes the restaurant, he and his brother recently opened special.

To get here the families, who have lived in Steamboat Springs for 25 years, have been working to get this spot ready to open for more than a year. Earlier this month their dream became a reality as opened the doors for the first time and  they said their family recipes have been well received by the residents of Steamboat Springs.

“We have always had the idea of opening a restaurant,” Antonio Escarcega said. “We worked in Mexico cooking many of the same items that are now offered on our menu.”

Currently the menu features a lot of their specially made chicken items included burritos, de pollo, flautas de pollo served with rice and beans as well as half chicken and whole chicken options. Those meals are also served with rice, beans tortillas and salsa. Customers will also find fluffy sopaipillas topped with sugar and cinnamon and topped with whipped cream and a scoop of ice cream.  The menu also has a selection of Mexican sodas.  

The space, which had been home to Big Iron Coffee, has been vacant for more than a year. However, the brothers have been working to update the space and add a commercial kitchen since the Big Iron location closed there in 2024.

The walls all have a fresh coat of paint, there is new flooring and seats have been added to the dining room which now seats up to 50 people. There is also a bar where customers can enjoy their meal.

The brothers are hoping to expand the menu with burgers and ribs created from a family recipe and have plans to start hosting Taco Tuesdays in the future. Los Brothers is also working to obtain a liquor license that will allow the restaurant to serve beer as well as other alcoholic beverages.

Los Brothers Pallo Asado al Carbon is open from 11 a.m. to 7 p.m. Monday through Saturday. The restaurant is closed on Sundays.

“We’ve had a very good reception,” Antonio Escarcega said. “We’ve been selling out of our chicken just about every day.
