Restaurateurs take over Creek View

Men with Steamboat, Clark experience head to Hayden grill

Two longtime restaurant industry workers have grabbed the reins at Creek View Grill in western Hayden.

The restaurant just wasn’t the cup of tea of developers Stef and Louis Nijsten, said Steve Chamberlain, who will run Creek View with Phillip Davis. The two are leasing the restaurant from the Nijsten brothers, who are building the Creek View Townhomes and Plaza on the same property.

“I’m pretty excited because they’re both really good cooks,” Stef Nijsten said. “It’s nice for us not to have to worry about the restaurant.”

Chamberlain and Davis worked in restaurants in Steamboat Springs and then ran White Bison Pub in Clark through their partnership, Eric & Phill Carnival Sideshow (though Eric has left the group). After their lease was not renewed, they set off in search of another project, Chamberlain said.

“This opportunity came up the second week of September, the first week of September,” he said. “They said, ‘We want you guys in.'”

The pair took over the restaurant Oct. 3 and have moved to Hayden. Chamberlain and his family are renting one of the townhomes on the property, and Davis is staying with them, Chamberlain said.

The two plan to change the menu, though Chamberlain did not say what would be altered. Creek View will keep its Western, home-style theme, he said. The new owners plan to add TVs and boost the bar area, he said.

Chamberlain said he expected the crowd to be similar to that of White Bison, which was in the Glen Eden Resort.

“It’s a lot of the same people, the demographic,” he said. “It’s definitely a little bit of a challenge to figure out what they want. I don’t think we’re going to do real high end; we’re not going to do lobster tails.”

Eric & Phill Carnival Sideshow, which is doing business as Creek View Grill, got the OK for a liquor license transfer Tuesday from the Hayden Town Board.

Town trustees approved the request on the condition that the pair’s background checks come up clean. The board also granted Chamberlain and Davis a temporary liquor license while they await approval from the state.

Chamberlain said he and his business partner were comfortable with their new venture. They’ve been in the restaurant industry for nearly 20 years, and Chamberlain said he had lived in the Yampa Valley since 1991.

“They seem to be the right kind of guys,” Stef Nijsten said.
