Spaghetti pie
A fun twist on spaghetti that will soon become a family favorite.
• 6 ounces spaghetti
• 2 large eggs
• 1/2 cup Parmesan cheese
• 1 cup low-fat cottage cheese
• 1 pound lean ground beef
• 15 ounces spaghetti sauce
• 8 ounces mozzarella cheese, shredded
Break spaghetti into thirds and boil until al dente. Slightly beat the eggs, then mix in the Parmesan cheese. Mix drained and cooled spaghetti with the egg/cheese mixture then pat into a 10-inch pie pan to form a crust. Spread cottage cheese over the bottom of the spaghetti “crust”. Brown ground beef, pour off grease. Stir spaghetti sauce into browned beef and simmer for 20 minutes. Pour sauce mixture into “crust”; cover with mozzarella cheese and bake for 30 minutes in a 350 degree oven. Let stand for 10 minutes before slicing and serving. Serves 6.
