Yampa Valley Lamb Burgers

1 pound ground lamb (ground beef may be substituted)

1 tablespoon garlic, minced (about 2 cloves)



1 ½ teaspoon olive oil

1 teaspoon ground coriander



1 teaspoons ground cumin

1 teaspoon salt

½ teaspoon smoked paprika

4 buns

Tzatziki Sauce

1 cup plain low-fat Greek-style yogurt

½ cucumber seeded and finely chopped

1 clove garlic, minced

2 tablespoons fresh lemon juice

2 tablespoons finely chopped herbs (mint or cilantro work well)

Salt to taste

Directions:

In a medium bowl, combine ground meat, seasonings and olive oil. Form the seasoned meat into four patties, put them on a plate and refrigerate for 30 minutes. Meanwhile, squeeze the water out of the cucumber. In a small bowl, stir the cucumber together with the remaining sauce ingredients and refrigerate, allowing the flavors to meld.

Preheat grill to a medium high temperature. Cook lamb patties for about 5 minutes each side or until an internal temperature of 140 degrees is reached. Serve on a bun with a dollop of tzatziki sauce. Makes 4 burgers.
