Summer stew

4 cups cooked meat, bird or tofu*

1 eggplant, diced

1 onion, chopped

2-3 summer squash, any kind, diced

1 cup sugar snap peas

4 tomatoes or 2 cups cherry or grape tomatoes, chopped

3 stalks celery, cut into bite sized pieces

1 yam or sweet potato, cubed

1 can broth

1 teaspoon each: salt, pepper, garlic salt

1 tablespoon basil

For stew, mix all ingredients and bring to a boil for at least 15 minutes. Season to taste. *If using tofu, firm is easiest to cut into cubes, dust with cornmeal mixed with salt and pepper and sauté in oil.
