Healthy Eating: Spicy Oat Pancakes

Spicy Oat Pancakes

A delicious high-fiber breakfast for a cold Colorado morning.

3/4 cup regular oats, uncooked

3/4 cup whole wheat flour

1 1/2 teaspoon baking powder

3/4 teaspoon cinnamon

1/4 teaspoon ground ginger

1/4 teaspoon baking soda

1 egg

1 cup skim milk

2 tablespoons oil

1 tablespoon honey

In a large mixing bowl, combine oats, flour, baking powder, cinnamon, ginger and baking soda. In medium bowl, mix together egg, milk, oil and honey until smooth. Combine dry and liquid ingredients and stir just until blended. Pour a scant 1/4 cup of batter onto a hot griddle coated with cooking spray. Flip pancakes when the edges appear cooked and the batter bubbles on the top. Serve immediately. Makes 10 pancakes.
