Healthy Eating: Pasta with Fresh Tomato Sauce
Serve this fresh tomato dish with crusty bread to absorb the remaining sauce.
3 large tomatoes cut into 1/2-inch pieces
1 clove garlic, minced
1 small onion, finely chopped
1 teaspoon dried whole basil
1/2 teaspoon dried whole oregano
1/2 teaspoon dried whole rosemary
1/2 teaspoon salt
Freshly ground black pepper
1/4 cup olive oil
Juice from 1 lemon
Pinch of cayenne pepper
8 ounce eggless spaghetti, uncooked
Parmesan cheese, grated
Place tomatoes in a bowl with all other ingredients (except pasta); mix well. Cook pasta and toss in bowl with sauce. Top with grated cheese and serve.
Hint: This pasta dish has a moderate temperature. If you prefer a warm side dish, heat pasta mixture before serving. Serves 4.
