Healthy Eating: Oriental Pasta with Peanut Sauce

This recipe can easily be made vegetarian by leaving out the chicken and changing the broth to vegetable broth.

1 pound spaghetti

1/4 cup creamy peanut butter

1/3 cup chicken broth

3 tablespoons low sodium soy sauce

2 tablespoons rice wine vinegar

1 teaspoon sugar

2 garlic cloves

1/4 teaspoon ginger

1 cup carrots, shredded

1/4 cup scallions, sliced

1/2 pound chicken, cooked and shredded

In a large pot, cook pasta according to the package directions. Meanwhile, combine the peanut butter, broth, soy sauce, vinegar, oil, sugar, garlic and ginger in a blender. Blend until smooth. Toss the cooked pasta with the sauce. Serve the pasta and allow each person to top it with the shredded carrots, scallions and chicken. Serves four to six.
