Healthy eating: Orange pound cake

Orange pound cake

• Cooking spray

• 1 1/2 cups flour



• 3/4 cup sugar

• 2 teaspoons baking powder



• 1/2 cup oil

• 1/2 cup orange juice

• 1 teaspoon grated orange peel

• 4 egg whites, stiffly beaten

Preheat oven to 350˚ degrees. Coat the bottom of a 9- by 5-inch loaf pan with cooking spray; dust with flour and set aside. Combine flour, sugar and baking powder in large bowl; add oil and orange juice. Beat until well blended (batter will be thick). Add orange peel and about 1/3 of egg whites; stir gently. Fold in remaining egg whites. Spoon batter into prepared pan. Bake for 45 minutes or until done. Cool in pan for 10 minutes, then remove from pan and cool on wire rack. Yield: 1 loaf or 16 slices.

Variation: For Chocolate pound cake, eliminate orange juice and orange peel; add 1/3 cup cocoa to flour mixture. Add 1/2 cup nonfat milk, 1 tablespoon vanilla and 1 teaspoon chocolate flavoring to oil.
