Healthy Eating: Linguine with Salmon and Lemon Sauce
For an easy end to a hectic day — keep ingredients for this quick meal in your pantry.
8 ounces spinach linguine
2 tablespoons olive oil
1/2 cup onion, sliced
2 cloves garlic, minced
1/2 teaspoon lemon peel, grated
1/3 cup fresh parsley, chopped
1 can (7 ounces) salmon, drained, or 3/4 cup leftover salmon
2 tablespoons Parmesan cheese, grated
Cook pasta according to package directions. While pasta is cooking, prepare sauce. Heat oil in a large skillet over low heat; add onion and saute until tender. Add garlic; saute another 2 minutes. Stir in lemon peel, lemon juice and parsley. Add salmon and carefully break up meat with a fork. Do not stir. Toss linguine and sauce together. Sprinkle with Parmesan cheese and serve immediately. Serves 4.
