Healthy eating: Light tiramisu

Light tiramisu

8 ounces mascarpone cheese, softened

4 ounces light cream cheese, softened

1/2 cup confectioners' sugar

1 cup frozen light whipped topping, thawed

2/3 cup hot water

2 teaspoons instant coffee granules

1/4 cup brandy or coffee liqueur

2 packages (3 ounces each) ladyfingers

1 1/2 teaspoon baking cocoa

In a mixing bowl, beat together the mascarpone cheese, cream cheese and confectioners' sugar until smooth. Fold in the whipped topping. Add the coffee granules to the boiling water, stirring until the granules dissolve. Stir in the brandy, and let the mixture cool. Arrange one package of the ladyfingers over the bottom and up the side of a two-quart soufflé dish. Brush the ladyfingers with half the coffee mixture, then spread with half of the mascarpone cheese mixture. Repeat the layering process with the remaining ladyfingers, remaining coffee mixture and remaining mascarpone cheese mixture. Sift the baking cocoa over the top. Chill, covered, for 8 to 10 hours. Serves 10.

While this recipe is not low in fat, it has half the calories of traditional tiramisu, and your guests will never know the difference.
