Lemony white bean spread
1 (15 oz.) can cannellini beans (no salt added), rinsed and drained
1 clove garlic
Juice and zest of 1 lemon
2 tablespoons olive oil
1/4 cup Kalamata olives
Cracked black pepper to taste
Add all ingredients, except pepper, to a food processor; pulse until desired consistency is reached. Season with pepper. Serve with fresh vegetables, crostini, or pita wedges. Serves 6.
