Healthy Eating: Hot Sweet Spiced Pecans

This easy recipe submitted by Pauline Bouchard makes an unexpectedly spicy holiday snack or can be mixed with dried cranberries for a festive salad topper.

1/2 cup brown sugar

1 teaspoon ground cinnamon

1/2 to 3/4 teaspoon ground cayenne pepper (adjust to your taste)

1/2 teaspoon salt

1/4 teaspoon ground allspice

1/8 teaspoon ground nutmeg

1/8 teaspoon ground cloves

4 1/2 teaspoons water

2 1/2 cup shelled pecan halves (walnuts or almonds can be substituted)

In a microwave-safe bowl, combine the sugar, spices and seasonings. Stir in the water and microwave uncovered on high for 1 minute. Stir in the nuts until well-coated. Microwave uncovered on high for three additional minutes, stirring after each minute. Immediately pour nuts onto a parchment-lined baking sheet and separate warm nuts. Cool and store in an airtight container. Spiced nuts can be frozen for several weeks with no loss of flavor or texture.
