Garlicky beet salad
Ingredients:
3 large beets
Olive oil
6 garlic cloves, peeled and minced
3 T. light mayonnaise
Salt and pepper, to taste
Directions:
Preheat oven to 375 degrees. Wash beets and trim off greens. Lightly coat each beet with olive oil then wrap in aluminum foil. Place the foil-wrapped beets in the hot oven until cooked through, about 45 to 60 minutes. Remove beets from the oven and allow them to cool. When they are slightly cool, use a sharp paring knife to slip off the beet skins. Use a cheese grater to grate beets into a small bowl. Add mayonnaise, garlic, salt and pepper to the shredded beet mixture, stir well and chill. Serves 4.
