Healthy Eating: Eileen’s Jicama Slaw

Eileen’s Jicama Slaw


2 cups grated jicama

1/3 cup diced green bell pepper

1/3 cup diced red bell pepper

1/3 cup chopped fresh cilantro (optional)

3 tablespoons Lighthouse coleslaw dressing

1 tablespoon fresh lime juice

Freshly ground black pepper to taste


Combine all ingredients in a medium bowl and serve. If you want a bit more zing, replace some of the dressing with Lighthouse Jalapeño Ranch dressing or add minced jalapeño. Lighthouse salad dressings are found in the refrigerator section of the produce department in your local grocery store.
