Healthy eating: CJ’s lamb or goat marinade

1/4 cup chopped garlic

2 tablespoons fresh rosemary

2 tablespoons oregano

1 1/2 tablespoons black pepper

3 tablespoons kosher salt

1/2 cup virgin olive oil

1/2 cup dry sherry

Mix all ingredients in a blender. If grilling whole lamb/goat, use injector to inject marinade into lamb/goat. Also, brush mixture over all of the lamb/goat and inside carcass. For smaller cuts, soak lamb/goat in marinade overnight.
