Healthy Eating: Cinnamon Oat Pancakes

Cinnamon Oat Pancakes


¾ cup regular oats, uncooked

¾ cup whole-wheat flour

½ cup all-purpose flour

1 ½ teaspoon baking powder

1 teaspoon cinnamon

¼ teaspoon baking soda

1 egg

1 cup skim milk

2 tablespoons oil

1 tablespoon brown sugar

Cooking spray


In a large bowl, combine oats, flour, baking powder, cinnamon and baking soda. In medium bowl, mix egg, milk, oil and brown sugar; mix until blended and smooth. Make a well in the middle of the dry ingredients and pour in the egg mixture; stir until just blended (don’t over mix, batter may be lumpy.) Set batter aside for 15 minutes while griddle heats to 350 degrees. Coat hot griddle with cooking spray then pour 1/4 cup of batter onto griddle. Cook until bubbles start to burst on first side; flip pancake and cook other side. Serves 4.
