Healthy Eating: Cinnamon brown rice

A wonderful accompaniment to your favorite pork dish — high in fiber with a delicate sweetness.

2 1/4 cups water

1 cup brown rice

1/4 teaspoon salt

1/2 cup dried cherries, dried cranberries or currants

1/4 cup slivered almonds, toasted

1 1/2 teaspoon cinnamon

Combine the water, rice and salt in a medium pot. Bring to boil, then lower to simmer. Cover and cook for 40 to 45 minutes or until the liquid has been absorbed and the rice is tender. Stir in the cherries, almonds and cinnamon.

Makes 6, 1/2-cup servings
