Healthy eating: Cilantro lime coleslaw
Cilantro lime coleslaw
4 green onions
1/2 head green cabbage
1/2 head red cabbage
2 cups of carrots (approximately) shredded
1/2 cup cilantro, chopped
1 lime
3/4 cup nonfat Greek yogurt
1 1/2 tablespoon sugar
1 teaspoon salt
1/2 teaspoon pepper
Chop the green onions with a bias (diagonal) cut. Shred the cabbage, and toss the cabbage, carrots, onions and cilantro in a large bowl. Zest the lime into a small bowl, then add the juice from the lime. Add the yogurt, sugar, salt and pepper, mixing well. Toss the cabbage mixture in the sauce and serve. Serves 12.
