Healthy Eating: Chicken cacciatore in 20 minutes

1 lb. boneless chicken strips

½ c. chopped onion

1 garlic clove, minced*

2 Tbsp. oil

1 (28 oz.) can tomatoes*

1 (8 oz.) can tomato sauce*

1 tsp. salt*

½ tsp. oregano

½ tsp. basil

1/8 tsp. ground red pepper*

1 c. green pepper strips

1 ½ c. Minute rice

Brown chicken, onion, and garlic in oil. Add tomatoes, tomato sauce, seasonings, and green pepper. Bring to a full boil. Stir in rice. Cover; remove from heat. Let stand for 5 minutes. Stir before serving. Makes 4 servings.

*Or use 1 (16 ounce) jar spaghetti sauce and 1 ¼ cups water.
