Healthy Eating: Cheese-Topped Orange Roughy

The tasty cheese crust on this delicate fish is a delicious combination.

2 pounds orange roughy (sole, cod or snapper can be substituted)

1/3 cup grated Parmesan cheese

1/3 cup light mayonnaise

1/4 cup green onion, sliced

1/2 teaspoon lemon juice

1/4 to 1/2 teaspoon garlic powder

Hot sauce to taste

Preheat oven to 350 degrees. Place the fish in a shallow glass casserole coated with cooking spray; bake 8 minutes or until fish flakes easily when tested with a fork. In a small bowl, mix together remaining ingredients, then spread the mixture evenly over the cooked fillets. Broil 6 inches from heat for 5 minutes or until topping is lightly browned. Serves 6.
