Healthy eating: Cauliflower Dijon

— Cauliflower will remain snowy white as it cooks if you add 2 tablespoons of lemon juice to the cooking water.

1 tablespoon Dijon mustard

1 tablespoon low-sodium soy sauce

1 tablespoon white wine vinegar

1 teaspoon canola oil

2 cups cauliflower florets

In a small bowl, whisk together the Dijon mustard, soy sauce, vinegar, and oil and set aside. Steam the cauliflower in a steamer until tender-crisp and drain. Place the cauliflower in a serving dish and drizzle with the mustard mixture. Serve immediately.

Makes 4, 1/2-cup servings
