Healthy eating: Buckwheat cakes

1 c. sifted flour

1/4 tsp. soda

1 Tbsp. sugar



2 c. sour milk or buttermilk

1 tsp. baking powder



3/4 tsp. salt

1 egg, well beaten

2 Tbsp. melted butter or other shortening

Sift flour once; measure. Add baking powder, soda, salt and sugar; sift again. Combine egg and milk; add gradually to flour, beating only until smooth. Add shortening. Bake on hot, greased griddle. Makes 12 cakes.
