Healthy eating: Barbara’s peachy chicken

Barbara’s peachy chicken

3 chicken breasts halved

1/2 cup flour

Salt & pepper

2 tablespoons butter

2 tablespoons cooking oil

1 1/2 cups orange juice

2 tablespoons vinegar

2 tablespoons brown sugar

1 teaspoon basil

1/2 teaspoon nutmeg

16 oz. can peach halves (drained) or 3 medium fresh peaches, sliced and tossed with ¼ cup sugar

Shake chicken pieces in a bag with flour, salt and pepper. Brown chicken in butter and oil. Place browned chicken in a greased three-quart casserole dish. Combine orange juice with vinegar, sugar, basil and nutmeg. Pour over chicken. Cover and bake at 375 degrees for one hour and 15 minutes. Add peaches and bake uncovered 15 minutes longer. Serve over rice.
