Baked breakfast apples
This deceptively easy recipe makes a delicious, warm start to a cold morning.
• 4 large Golden Delicious apples, cored
• 1/2 cup packed brown sugar
• 1/2 teaspoon cinnamon
• 1 cup apple juice

• 2 cups vanilla fat-free yogurt
• 1 cup reduced-fat granola
Arrange the apples in a round baking dish. Combine the brown sugar and cinnamon in a bowl and mix well. Spoon some of the brown sugar mixture into each apple cavity and sprinkle the remaining brown sugar mixture over the top of the apples. Pour the apple juice into the baking dish. Bake at 350 degrees for 50 to 60 minutes or until the apples are tender when pierced with a sharp knife, basting every 15 minutes. Place the apples in individual dessert bowls. Cut each apple, but not through, into eight wedges to resemble a flower. Fill the center of each apple with 1/2 cup of the yogurt. Sprinkle with granola.
