Tiramisu Truffles

— Ingredients:

Batter

8 oz. cream cheese

3 cups powdered sugar

3 cups white chocolate melted

1 tablespoon tiramisu syrup/flavoring

1/2 tablespoon expresso cooled

1/2 cup mini chocolate chips

3-4 cups or more of semisweet chocolate melted

Mini vanilla wafers

1/2 cup softened butter

1/2 cup sugar

1/4 cup brown sugar

1 large egg

1 teaspoon vanilla extract

1 1/3 cup all purpose flour

1/2 teaspoon of salt

1/2 teaspoon baking powder

Wafer directions:

Preheat oven to 325 degrees

Line baking sheets with parchment paper

In a large bowl cream together butter and sugars until light. Beat in egg and vanilla extract.

Sift flour, salt and baking powder over butter mixture and stir until combined.

Scrape dough into pastry bag fitted with a plain piping or plastic pastry bag.

Pipe dough onto the prepared baking sheet making each cookie the size of a quarter.

Bake for 10-15 minutes or until golden brown.

Cool and store in airtight container.

Tiramisu directions:

Beat cream cheese and sugar together.

Add melted white chocolate, tiramisu flavor and expresso. Batter will be runny. Add mini chocolate chips until just mixed.

Make wafers and place cooled wafter onto lined baking sheet.

Use a mini muffin scooper to scoop truffles into round shapes. Place each on a wafter. Place cookie sheet in freezer for 30 minutes to an hour or until cookie and truffle are stuck together and truffle is relatively hard.

Dip each truffle cookie into melted semi sweet chocolate and place in fridge to harden.
