— Picture the scene if you will. A car full of people is cruising through a beachside town on the Florida coast. Siblings are fighting in the backseat; they are surfed out, hungry and tired of exploring their quaint new surroundings. Sign after sign highlighting sundowners or “the best crab cakes you’ll ever taste” are not giving hope for a happy ever after to this day. Amongst the clapboard façade housing and cottage restaurants a trailer pops up blazoned with the sign “The Great Meltdown”.

The answer to any fraught driver transporting a crowd of mini diners is gourmet melted cheese to go. What a concept, which we hope will miraculously find its way to Steamboat’s Yampa Street one day.

If like us, you are not willing to wait then take a peek at these tasty offerings and sample at home. For someone who stuck to plain old cheese melted on bread, I’ve experienced a fromage based revolution.



  • Goat Cheese, prosciutto, arugula and tomato
  • Mushroom, caramelized onions, muenster and smoked provolone
  • Brie and bacon on cranberry walnut bread.
  • Gruyere, pulled pork, pickles and mustard.
  • Bacon jam, avocado and cheddar
  • Goat Cheese, strawberry preserves and prosciutto.
  • Blue cheese infused brie, bacon, caramelized onion and balsamic reduction tomato.

From now on a meltdown in this household is code for culinary contentment.
