Steamboat’s Freshies to get a fresh new look

Restaurant plans November opening with expanded waiting area, new roof

— Freshies’ owners Kristy and Scott Fox are planning to reopen the restaurant just before Thanks­­giving with modifications including a new roof and an expanded waiting area.

The Foxes said the restaurant at Trafalgar Drive and U.S. Highway 40 will celebrate its eighth birthday in June. But Kristy Fox said renovations were long overdue for the aging building that previously housed businesses including an Arby’s and a Tastee Freez. The new, pitched roof will put an end to searching for buckets at 2 a.m. to catch leaks through the old, flat roof, she said. A new heating, ventilation and air conditioning system will improve the restaurant’s interior climate.

Freshies closed for off-season repairs Oct. 3.

Scott Fox said Wednesday that a larger waiting area for the often-crowded restaurant will feature a new entrance that opens into an inviting space with couches, benches and a self-serve coffee station. The new entrance also will improve access for people with disabilities, he said.

On Wednesday, workers with local contractor Letson Enter­prises worked on the roof under cloudy skies and softly blowing snow. Wagner Design Studio and Steamboat Engineering & Architectural Design also are involved in the renovations.

The Foxes said they’ve been planning the renovations for some time and had no trouble finding eager contractors amid Steamboat Springs’ lagging construction industry.

“We’re fortunate to be able to do the remodel,” Scott Fox said.

He added that the new roof will extend over the patio area to provide coverage for customers seated outdoors. Metal siding beneath the roof will spruce up the exterior, he said, as will some new coloring in reds and browns.

Kristy Fox said that while they’ve “picked out some fun things inside,” customers won’t be thrown off by a new feel after the reopening.

“It’ll feel like the same place when you walk in,” she said. “But it’ll look much nicer when you drive by.”

Carpet in much of the dining area and other acoustic-minded improvements could reduce some of Freshies’ lunchtime noise on busy days, she said.

The restaurant’s overhaul is clearly visible to people driving by on U.S. Highway 40 and has raised some rumors in the community. Kristy Fox said contrary to local hearsay, the revamped Freshies will not include additional seating or a second floor.

The Foxes said they’ve been watching the weather avidly and remain confident in the project’s schedule. All of Freshies’ 25 or so employees will return for the restaurant’s reopening, Kristy Fox said.

In the meantime, the Foxes are planning to travel a bit and take advantage of the time off. Kristy Fox works in the restaurant’s dining area, and Scott Fox works in the kitchen. Both put substantial hours into their business. The other day, Kristy Fox said, they finally took advantage of a gift certificate for a couple’s massage.

She said Freshies staff gave them the gift certificate four years ago.

“We truly are enjoying a break,” she said.
