Pumpkin Pie Cheesecake

Crust:

3 cups crushed graham crackers

3 TB butter

Filling:

4 (8oz) packages cream cheese

1 ½ cups white sugar

¾ cup milk

4 eggs

1 cup sour cream

1TB vanilla extract

½ cup all-purpose flour

1/2 cup pumpkin puree

1 TB pumpkin pie spice

Streusel:

1/3 cup all-purpose flour

2 TB white sugar

2 TB brown sugar

½ teaspoon cinnamon

3 TB butter

Directions:

  1. Preheat oven to 325 degrees F. Grease a 9 inch springform pan.

  2. In a medium bout, mix graham cracker crumbs with melted butter. Press onto bottom of springform pan.

  3. In a mixer on medium speed, mix cream cheese with sugar until smooth. Blend in milk, and then mix in the eggs on at a time, low speed. Mix in sour cream, vanilla and flour until smooth.

  4. Add pumpkin and pumpkin pie spice, mix in by hand.

  5. Pour filling into springform pan over crust.

Streusel: Combine all ingredients, mash in butter with fork until crumbly.

  1. Sprinkle streusel on top filling.

  2. Bake 1 ½ hours. Turn off oven, and let cake cool in oven for 4 to 5 hours. Chill in refrigerator until serving.
