Mint Oreo Truffles

— Ingredients:

36 Mint Oreo cookies, finely crushed

1 8oz package of softened cream cheese

Some type of melting chocolate (can use semi-sweet bakers chocolate, milk chocolate, dark chocolate, white chocolate, etc… whatever your heart desires)

DIRECTIONS:

Crush up Mint Oreos as finely as possible.

Mix cookie crumbs and cream cheese until blended.

Shape mixture into 1 inch balls and place on a cookie sheet (I suggest covering the cookie sheet with wax paper for a simple no-stick solution).

Chill in fridge for about an hour. This makes sure the truffle is firm and will not fall apart – do not skip this step.

Melt the chocolate.

Dip the Mint Oreo/cream cheese balls into the melted chocolate and coat thoroughly. Using two forks or two spoons is the easiest way to dip in and out of the chocolate.

Place back on cookie sheet.

Top truffles however you want – with extra Oreo crumbs, sprinkles, mini-chololate chips, etc.

Let truffles set and harden. I prefer to stick them in the fridge for this step as well.
