Jenny’s Jumble Cups

Filling:

Mix together:

1/8 oz package of cream cheese (softened)

scant 1/3 cup sugar

Add:

1 cup (more or less) of chocolate chips

Cake:

Stir, whisk or sift together:

2 cups flour

2cups sugar

1 teaspoon baking soda

1/2 teaspoon salt

In saucepan heat:

1 cup butter

1 cup water

1/3 cup unsweetened cocoa powder

Cool slightly and add to flour mixture. Mix well.

add:

1/2 cup buttermilk or sour milk

1 1/2 teaspoons vanilla

Mix, then beat in 2 eggs.

add a bunch of chopped nuts (pecans or walnuts)

Fill cupcake papers just over half full with cake batter and add about a tablespoon of the filling to each.

Bake at 350 for about 18-20 minutes.

Frost when cooled.

Chocolate frosting:

Melt together:

1/4 cup of butter

3 tablespoons of cocoa

3 tablespoons of buttermilk or sour milk

Add about 1 1/4 cups sifted confectioners sugar to still warm butter mixture.

Mix well and add 1/2 teaspoon vanilla.

Frost cupcakes with warm icing.
