Autum Sloop’s Secret Apple Pie
2 rolls prepared pie crust (Pillsbury recommended)
4 to 6 gala apples, peeled, cored and thinly sliced
2 tablespoons fresh-squeezed lemon juice
2/3 cup sugar
2/3 cup light brown sugar, packed

1/2 cup all purpose flour
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon allspice
1/4 teaspoon ground ginger
1 large egg
2 tablespoons butter
Sugar for sprinkling
Preheat oven to 400 degrees. Press pie crust into bottom of pie plate. Prepare apples as instructed above and place in large bowl. Add remaining ingredients to apple (except egg). Toss to coat apples.
Spoon apple filling into pie crust spreading evenly. With second piece of dough, roll out and cut into ½-inch strips. Weave a lattice pattern on top of pie using dough. Brush top of pie with egg wash and sprinkle with 1 teaspoon sugar.
Bake 40 minutes or until top is golden brown and juices are bubbling up. Cool on wire rack.
