Golden Apple Cake


8 oz crushed pineapple

1 1/2 cups brown sugar

1 1/4 cups vegetable oil

3 eggs

2 cups flour

3/4 cups nuts (optional)

2 teaspoons each of:

baking soda



1 teaspoon salt

2 cups grated apples (golden delicious)


Drain pineapple well and save the juice.

Combine all ingredients and mix well.

Cook at 350 degrees in 2 nine inch round cake pans for 35 minutes or in a bundt pan for 45 to 50 minutes.

Maple frosting:

3 oz cream cheese

2 Tbs soft butter

1 1/2 cup confectioners sugar

dash of salt

3 Tbs pineapple juice

1/4 tsp maple flavor

1/4 cup chopped nuts (optional)


Mix until smooth and ice the cake!
