Chocolate Beet Cake

— Ingredients:

1/2 cup coconut oil

3/4 cup packed brown sugar

2 cups pureed cooked beets (about 3 medium sized red beets)

1/2 cup dairy-free chocolate chips melted

1 teaspoon vanilla extract

2 medium banans mashed

2 cups all purpose flour

1 teaspoon baking powder

1 teaspoon salft

Confectioners sugar for dusting

Directions:

Preheat oven to 350 degrees and lightly oil a Bundt pan

In a small bowl mix together flour, baking powder and salt. Set aside.

In another bowl mix together cream, oil, bananas and sugar.

Add beets, melted chocolate and vanilla. Pour dry ingredients into wet and stir until just combined.

Pour into prepared Bundt pan, bake 45 minutes or until toothpick inserted in center comes out clean.

Cool in pan for 10 minutes and transfer to wire rack.

Dust with confectioners sugar as desired.
